A party is just a meeting without cake!

I  was recently contacted by 'Baking Mad' to see if I would like to have a little browse of their fabulous website and pick something to bake, of course the answer was an instant yes!

After getting very into The Great British Bake Off this year and being so certain of who I thought would win (ahem Ruby) I couldn't wait to get baking! I had a good look at the wide variety of cakes and other yummy looking treats and decided on this Victoria sponge cake, it turned out to be extremely scrummy and I couldn't wait to share the recipe with you all, so here you go!
Ingredients

For the sponge
  • 175g Butter (unsalted) room temperature
  • 175g caster sugar
  • 1 Lemon zest grated
  • 175g Self-raising white flour
  • 1tsp Baking powder
  • 3 free range eggs

For the filling

  • 150g Strawberries, sliced
  • 3 tbsp Strawberry jam
  • 150ml Double cream
  • 4 Strawberries to decorate
Cream together the butter and sugar until smooth and fluffy
Beat in the eggs and flour and baking powder alternately, until combined and smooth. If you are using lemon zest add it in at this point (I didn't have a lemon so I skipped this bit.)

Divide the mixture equally between two lined and greased cake tins and bake for 20 minutes at 180c
Once the cakes are cooled whip your double cream until it forms soft peaks and then spread it over one half of your cake, then spread strawberry jam over the other half. I sliced up some strawberry's and put them in between the cream and jam too., then sandwich your cakes together.
Serve with tea, or if your not a tea drinker like me HOT CHOCOLATE, just in case you aren't about to consume enough calories!
