Pink Eton mess


A couple of weeks ago the weather was a lot more summery, Wimbledon was on and I saw these delicious looking meringues over on the lovely Olivia's blog. It seemed like the perfect excuse to consume a whole lot of calories and to use my pretty baking bowls (any excuse to use these!) So here is how to make pretty pink meringues to put in your Eton mess.

- 3 x egg whites
- 150g caster sugar
- Pinch of salt
- Pink food colouring 
- Single cream
- A selection of fresh summer berries
- Greaseproof paper

Preheat the over to 150c. Start by whisking together your egg whites and salt until they form soft peaks, it's probably best to use an electric whisk for this or you might be whisking until next years Wimbledon!
Gradually add in the sugar, a spoonful at a time and whisk as you go, then add in your pink food colouring. I added in 1 teaspoon full and they looked more of a peachy colour when baked, so I would go for about 2-3 teaspoons. Whisk until you get stiff peaks when you lift the whisk.
Gently places spoonfuls of meringue mixture onto your lined baking tray and make a well in the middle for your fruit to sit in later! Bake for 30 minutes untill slightly golden, but make sure you don't get too impatient and open the oven door too soon or they won't work.

Silly me forgot to take the last photos of my finished Eton mess off my memory card before formatting it... woops! But you can see the cooked meringues in the top picture. They are really delicious broken up into a bowl, sprinkled with fresh summer berries and topped with single cream, enjoy!
